The Roots We Cherish
The story of Zaytuna begins in the rugged terrain of the Nafusa Mountains, specifically in the historic region of Gharyan, Libya. Here, the soil is rich with history and the unique climate perfectly tempers the fruit. Our ancestors planted the first groves in this ancient landscape, understanding the unyielding bond between the earth and the hands that tend it.
Gharyan has a deeply rooted heritage of olive cultivation dating back centuries, intertwined with the region's famous troglodyte dwellings and Roman agricultural traditions. Decades later, the very same trees—some ancient and gnarled by time—continue to bear fruit in this striking environment. The passing of seasons here has taught us patience, resilience, and the sheer value of uncompromised quality over yield.
A Process Unchanged
Harvesting at Zaytuna is not an industry, but a ritual. When the autumn sun casts long shadows over the groves, we gather the olives by hand—the same way its always been done. This labor-intensive method prevents bruising and begins the crucial timeline of getting the fruit to the press while it is pristine.
Our oil is extracted using traditional cold-press techniques directly at the source. There are no shortcuts. The result is a liquid gold that holds the very essence of the Mediterranean, capturing peppery notes, bold aromas, and an immaculate finish.
